DoSage
marmalades, jams jellies 0,3-0,4 g/kg product
fruit syrups, juices 0,3-0,5 g/kg product
Vegetables, mushrooms in vinegar up to 0,6-0,8 g/kg product

Pour the specified amount of Sorbic acid into the finished product and stir thoroughly.

Sorbic acid prevents the growth of moulds, yeasts and certain bacterial cultures that can be found in cheese, juices, jams, wine and dried fruit. It is traditionally added to beverages, ketchups, mayonnaise, margarines, cheese and other dairy products, bakery preparations and confectionery, meat products, salad dressings and dressings and pickled Vegetables. However, its salts (E 201 - E 203 - sorbates) are often used as additives because Sorbic acid is poorly soluble in Water.

Sorbic acid is easily metabolised in the human body and is considered the least harmful preservative additive. The same applies to its salts - sorbates. At doses of 5% in the diet, even Sorbic acid caused accelerated growth and prolonged life span of male rats. This was mainly explained by the increased calorie intake, as Sorbic acid gives the body energy and actively strengthens the body against infections.

Sorbic acid and its salts are also used as preservatives in cosmetics and pharmaceuticals. As a result, the effects of these substances on the skin have been tested and it has been shown that at concentrations of around 1% they cause irritation of mucous membranes and cause hives in sensitive people. In food, these substances are most commonly found in concentrations between 0.1%-0.3%.

Notice

In 1998, the CGI found Sorbic acid in salads (Walnut, Parisian, etc.), fine pastries and breads, even though its use is prohibited in these products. Furthermore, Sorbic acid must not be added to salads as it could mask the presence of bacteria that cause food poisoning. In the Czech Republic, the use of Sorbic acid is permitted only for selected types of food. The same is true in the USA, where Sorbic acid is a GRAS substance (Generally recognized as safe, i.e. a safe substance not subject to regulation).

It is a white powder freely available in nature e.g. in the berries of mountain trees - cranes. It has a slightly pungent smell. Sorbic acid and its salts are the least harmful preservatives of all - they cause the least allergies. Its main role in food is to prevent the growth of moulds, yeasts and bacteria. Production It is obtained from the berries of mountain cranes or, more often, synthetically by cheMical means from various compounds - e.g. from acetaldehyd. or Kerosene. Use: Used especially in beverages and cheeses to prevent the development of mold, yeast, bacteria. In wine, it can be converted into a substance that imparts a muscatel scent. It is also used in bakery products, margarines, packaged cheeses, ketchups, chocolate syrups, fresh fruit juices, salads, cakes, pie fillings, artificially sweetened Gelatins, etc. It is also used in cosmetics as a humectant or as a preservative, in medicines, toothpastes, animal feed and other products. Adverse effects No studies have demonstrated the toxicity of Sorbic acid. There should be a complete metabolic transformation in the human body. However, it may cause allergic skin reactions in sensitive persons (e.g. urticaria), especially when the substance comes into contact with the skin through cosmetic products. Additional information The substance has GRAS (generally recognized as safe) status - i.e. that it is considered safe by the US FDA. In the Czech Republic, the substance is permitted for limited types of food, in the USA its use is possible.

It irritates the skin. Causes severe eye irritation. May cause respiratory irritation. Do not breathe dust/smoke/gas/fog/aerosols. Avoid contact with eyes, skin or clothing. If eyes are affected, rinse gently with Water for several minutes. Remove the contact lenses if they are in and if they can be removed easily. Continue rinsing. If eye irritation persists seek medical attention/treatment.

First aid instructions-general instructions: in case of aspiration: consult a doctor-symptomatic treatment. In case of skin contact, wash the affected area thoroughly with Water. In case of eye contact, flush quickly and thoroughly with plenty of Water, seek medical attention. If ingested, symptomatic treatment.
