Pour the yeast or alcohol into the graduated cylinder, use a thermometer to determine the temperature of the liquid (the ideal temperature is 20°C) then dip the alcohol meter into the graduated cylinder and the value you measure is the percentage of alcohol. If the liquid has a different temperature, the percentage of alcohol needs to be calculated using tables.
