
Citric acid for food in powder form. It is suitable for seasoning jams, fruit salads, and compotes. Citric acid supports the gelling process and enhances the flavor of fruits and vegetables during canning. It is also suitable for flavoring salads, compotes, and beverages. Furthermore, it is a substantial helper in removing limescale, e.g. in coffee makers and electric kettles. Commonly used in food – code designation E330 – as an acidity regulator and at the same time as a component that prolongs the shelf life of products.
It is not a preservative, but by lowering the pH, it increases the shelf life of some vitamins and nutrients. Citric acid is an organic compound from the group of hydroxycarboxylic acids, obtained through chemical synthesis or citric fermentation of purified sugar or starch hydrolysate with the help of mold cultures. Mentions of its carcinogenic effects find no confirmation.
